Serve with a crusty loaf of bread and it's a stick to your ribs meal! I usually double or triple this and then just freeze the extras in single serving containers for my husband to take in his lunch.

Ingredients
- 1 large carrot, grated
- 2 medium potatoes, peeled and grated
- 1 medium onion, grated
- 2 cups broccoli, chopped
- 2 cups chicken broth
- 1/4 cup butter
- 1/2 cup flour
- 3 cups whole milk
- 2 cups sharp cheddar cheese, shredded
- - salt and pepper to taste
How To Make broccoli cheese soup

Step 1Cook all vegetables in chicken broth until tender. In separate pan, melt butter and whisk in flour. Cook, stirring constantly for 1 minute. Remove from heat and whisk in milk. Place back on medium heat and cook until thickened. Add to vegetables. Add cheddar cheese and stir until melted. Salt and pepper to taste.
