This recipe was given to me by a sweet woman my son works with. She made it for him almost every week in the winter. He works outside for a commerical roofer, and this soup warms him up. Thanks Theresa

    butter, cold
  • 1
    onion (chopped)
  • 1
    (16) pkg frozen chopped broccoli
  • 4 can(s)
    chicken broth
  • 1
    lb loaf of velveeta cheese (cubed)
  • 2 c
    half and half
  • 1 Tbsp
    garlic powder
  • 2/3 c
  • 1 c
  • 1 pkg
    cheddar cheese
  • 1 pkg
    mozzarella cheese

How to Make Broccoli Cheese Soup


  1. In a stock pot, melt butter over medium heat. Cook onion in butter until softened. Stir in Broccoli and cover with chicken broth. Simmer until broccoli is tender. 10-15 minutes.
  2. Reduce heat and stir in Velveeta cubes until melted. Mix in half and half and garlic powder.
  3. In a small bowl, stir cornstarch into water until dissolved. Stir into soup, cook stirring frequently until thickened, add cheddar and mozzarella cheese to taste.
