broccoli cheese soup

This recipe was given to me by a sweet woman my son works with. She made it for him almost every week in the winter. He works outside for a commerical roofer, and this soup warms him up. Thanks Theresa

Ingredients

  • 1/2 cup butter, cold
  • 1 - onion (chopped)
  • 1 - (16) pkg frozen chopped broccoli
  • 4 cans chicken broth
  • 1 - lb loaf of velveeta cheese (cubed)
  • 2 cups half and half
  • 1 tablespoon garlic powder
  • 2/3 cup cornstarch
  • 1 cup water
  • 1 package cheddar cheese
  • 1 package mozzarella cheese

How To Make broccoli cheese soup

  • Step 1
    In a stock pot, melt butter over medium heat. Cook onion in butter until softened. Stir in Broccoli and cover with chicken broth. Simmer until broccoli is tender. 10-15 minutes.
  • Step 2
    Reduce heat and stir in Velveeta cubes until melted. Mix in half and half and garlic powder.
  • Step 3
    In a small bowl, stir cornstarch into water until dissolved. Stir into soup, cook stirring frequently until thickened, add cheddar and mozzarella cheese to taste.
