This was given to me by a dear friend from Church and my family always requests it.

Ingredients

  • 6 slices bacon
  • 1 small onion, chopped
  • 4 cups potatoes, diced
  • 1 small container sour cream
  • 1 pound velveeta

How To Make bev's cheese soup

  • Step 1
    Fry bacon until crisp. Remove from pan and drain. Cook chopped onion in bacon grease until wilted.
  • Step 2
    Add diced potatoes to pan with onions and add water to pan until just covers potatoes. Bring to a boil and cook until potatoes are tender (about 10 mins). Do not drain off water.
  • Step 3
    Lower to medium heat and add container of sour cream and mix to blend. Cube Velveeta cheese and add to soup mixture stirring until melted.
  • Step 4
    Crumble bacon into soup and serve.
