Ingredients

  • 6 slice
    bacon
  • 1 small
    onion, chopped
  • 4 c
    potatoes, diced
  • 1 small
    container sour cream
  • 1 lb
    velveeta

How to Make Bev's Cheese Soup

Step-by-Step

  1. Fry bacon until crisp. Remove from pan and drain. Cook chopped onion in bacon grease until wilted.
  2. Add diced potatoes to pan with onions and add water to pan until just covers potatoes. Bring to a boil and cook until potatoes are tender (about 10 mins). Do not drain off water.
  3. Lower to medium heat and add container of sour cream and mix to blend. Cube Velveeta cheese and add to soup mixture stirring until melted.
  4. Crumble bacon into soup and serve.
