I have found that if you are having trouble thickening your potato soup add instant mashed potatoes to it until it gets to the consistency you want. This can also be a great opportunity to add flavor (such as loaded mashed potatoes)

Ingredients

  • 6 - bacon strips, diced
  • 1 can 14 1/2 oz chicken broth
  • 3 - potatoes peeled, cubed
  • 1 small carrot, grated
  • 1/2 cup chopped onion
  • 1 tablespoon dried parsley flakes
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 tablespoons all-purpose flour
  • 3 cups milk
  • 8 ounces process american cheese, cubed
  • 2 - onions, thinly sliced

How To Make best ever potato soup

  • Step 1
    In a large saucepan, cook bacon over medium heat until crisp. Using a slotted spoon remove to paper towels; drain.
  • Step 2
    Add the broth, vegetables, and seasonings. Bring to a boil. Reduce heat; cover and simmer for 15 minutes or until potatoes are tender. Combine flour and milk until smooth; add to soup. Bring to a boil; cook and stir for 2 minutes.
  • Step 3
    Add cheese; stir until cheese is melted and the soup is heated through. Garnish with green onions if desired.
