I make lots of soup and usually make extra since I have a mess to clean up I may as well cook extra and freeze the soup to have on a sandwich and soup dinner night.

bacon , diced
2 medium
carrots, chopped
2 stalk(s)
celery, diced
2 clove
garlic , finely chopped
2 Tbsp
chopped fresh basil[or 1 tbsp dried basil
1/2 tsp
dried oregano
1 can(s)
28 ounce stewed tomatoes
1 can(s)
540ml romano beans rinsed and drained
5 c
chicken stock
2 c
bow tie pasta or pasta of your choice
1 c
finely grated parmesan cheese
1 large
onion diced

How to Make Bean and Pasta Soup


  • 1In large saucepan saute bacon over medium heat, cook for 8 to 10 minutes nearly crisp, add vegetables, garlic and herbs.
  • 2Pour tomatoes into a bowl and break up tomatoes into smaller pieces,,add tomatoes to saucepan, the beans which have been rinsed and drained and add the chicken stock, simmer add salt and pepper
  • 3Add pasta to saucepan and cook until done to your liking about 10 minutes....serve with parmesan cheesesprinkled over top.
