Ingredients
- 3 medium carrots, cut up
- 2 stalks celery
- 2 roots parsley
- 2 medium onions, quartered
- 1/4 head savoy cabbage
- 5 whole peppercorns
- 2 quarts water
- 8 medium beets
- 1 tablespoon lemon juice
- 1 teaspoon sugar
- 1/8 teaspoon pepper
- 1/4 teaspoon garlic powder

Step 1Simmer the vegetables with the peppercorns and salt in water for 30 minutes. Strain. Wash and bake the beets for 1/2 hour in a 350F oven. Peel, grate them coarsely, and add to the broth. Simmer for 5 more minutes. Add lemon juice and season to taste.
