Ingredients
- 2 quarts chicken broth
- 1/2 cup barley
- 1 - onion, chopped
- 3 - carrots, chopped
- 2 - celery stalks, chopped
- 1 - parsley sprig chopped
- 1 teaspoon thyme
- 1 - bay leaf
- 8 cups other vegetables
How To Make barley vegetable soup

Step 1Place ingredients in large pot and bring to boil.

Step 2Add salt and pepper to taste.

Step 3Reduce heat, cover and simmer for about 1 hour, or until barley is tender.

Step 4Remove parsley and bay leaf.

Step 5Divide if not using entire soup at one meal.

Step 6Half a batch should serve 4 with addition of vegetables suggested below.
