Ingredients

  • 2 quarts chicken broth
  • 1/2 cup barley
  • 1 - onion, chopped
  • 3 - carrots, chopped
  • 2 - celery stalks, chopped
  • 1 - parsley sprig chopped
  • 1 teaspoon thyme
  • 1 - bay leaf
  • 8 cups other vegetables

How To Make barley vegetable soup

  • Step 1
    Place ingredients in large pot and bring to boil.
  • Step 2
    Add salt and pepper to taste.
  • Step 3
    Reduce heat, cover and simmer for about 1 hour, or until barley is tender.
  • Step 4
    Remove parsley and bay leaf.
  • Step 5
    Divide if not using entire soup at one meal.
  • Step 6
    Half a batch should serve 4 with addition of vegetables suggested below.
  • Step 7
    *Suggestions for \"other vegetables\" listed in ingredients - 2 cups green beans, 3 carrots, peeled and sliced, 2 zucchinis, sliced thickly, 2 cups broccoli, 2 cups cauliflower florets, 2 stalks celery, 8 ounces mushrooms, washed and thinly sliced.
