How to Make Baked Potato Soup
- Chop onions into 1/4" cubes. In a soup pot, boil potatoes, onion and garlic in enough water to just cover the veggies until potatoes are fork tender.
- While potatoes are boiling, cut bacon into 1/4" pieces and brown. Drain on paper towels and set aside.
- When potatoes are done, remove from heat. Add soup, sour cream, and shredded cheese. Fold together with as much bacon as you like. I use the rest for salads or to top potatoes. Add salt and pepper to taste.
- Put back on medium heat and heat through, or simmer on med until soup is as thick as you like it.
