Ingredients

  • 2 medium ripe avocados
  • 4 small scallions -- chopped
  • 1/2 cup hatch green chilis -- chopped
  • 1 large fresh jalapeno -- chopped
  • 1 medium tomato -- chopped
  • 2 cups chicken broth
  • 1 cup buttermilk
  • 1 tablespoon adobo all purpose mexican seasoning

How To Make avocado soup

  • Step 1
    Cut avocado into quarters, remove pit and peel, and put the flesh in a blender or processor.
  • Step 2
    Add remaining ingredients together, half the stock, and puree until smooth.
  • Step 3
    Combine with remaining stock in a pan.
  • Step 4
    Simmer the soup while covered for 10 minutes.
