This recipe was handed down to me by my father. His father used to make it for him when he was a boy. You could subsitute the meat for pork, chicken or even vension. Goes good with fresh baked bread or rolls.

Ingredients

  • 1-1 1/2 lb
    fresh aspargus
  • 1 lb
    ground chuck
  • 1
    medium onion chopped
  • 1 can(s)
    beef broth, reduced sodium
  • 1
    large bay leaf
  • 1 can(s)
    water
  • 1-16oz. can(s)
    stewed tomatoes
  • 1-12oz. can(s)
    tomato juice
  • 2 Tbsp
    beef boullion
  • 1/2 tsp
    thyme, dried
  • 1/2 tsp
    marjoram, dried
  • ·
    slat and peper to taste

How to Make Asparagus Soup

Step-by-Step

  1. Brown meat and onion in skillet. Drain any grease.
  2. In a cooking pot add all ingredients except for the asparagus and cook for 1/2 hour on medium to low heat (do not boil)
  3. Wash and cut up the asparagus into bite size pieces.
  4. After 1/2 hour is up add the aparagus to the pot and continue to cook for another 1/2 hour or until vegetable is done.
