This recipe was handed down to me by my father. His father used to make it for him when he was a boy. You could subsitute the meat for pork, chicken or even vension. Goes good with fresh baked bread or rolls.

Ingredients

  • 1-1 1/2 pounds fresh aspargus
  • 1 pound ground chuck
  • 1 - medium onion chopped
  • 1 can beef broth, reduced sodium
  • 1 - large bay leaf
  • 1 can water
  • 1-16oz. can stewed tomatoes
  • 1-12oz. can tomato juice
  • 2 tablespoons beef boullion
  • 1/2 teaspoon thyme, dried
  • 1/2 teaspoon marjoram, dried
  • - slat and peper to taste

How To Make asparagus soup

  • Step 1
    Brown meat and onion in skillet. Drain any grease.
  • Step 2
    In a cooking pot add all ingredients except for the asparagus and cook for 1/2 hour on medium to low heat (do not boil)
  • Step 3
    Wash and cut up the asparagus into bite size pieces.
  • Step 4
    After 1/2 hour is up add the aparagus to the pot and continue to cook for another 1/2 hour or until vegetable is done.
