artichoke lemon soup

This soup is full of flavor. I got this recipe from my mother in law, she has a wonderful little soup cookbook. We have loved every recipe we have tried.

Ingredients

  • 4 tablespoons olive oil
  • 1 1/2 cups onion, diced
  • 1 cup celery, diced
  • 4 cups vegetable stock
  • 2 cups heavy cream
  • 1 cup white wine
  • 2 cans (14 oz each) artichoke hearts, drained and chopped
  • 1/4 cup fresh lemon juice
  • 1 tablespoon fresh parsley, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

How To Make artichoke lemon soup

  • Step 1
    In a large soup pot, heat olive oil over medium heat. Add onion and celery and saute for 10 minutes, stirring occasionally. Add remaining ingredients. Simmer for 30 minutes.
