This soup is full of flavor. I got this recipe from my mother in law, she has a wonderful little soup cookbook. We have loved every recipe we have tried.

Ingredients

  • 4 Tbsp
    olive oil
  • 1 1/2 c
    onion, diced
  • 1 c
    celery, diced
  • 4 c
    vegetable stock
  • 2 c
    heavy cream
  • 1 c
    white wine
  • 2 can(s)
    (14 oz each) artichoke hearts, drained and chopped
  • 1/4 c
    fresh lemon juice
  • 1 Tbsp
    fresh parsley, minced
  • 1 tsp
    salt
  • 1/2 tsp
    pepper

How to Make Artichoke Lemon Soup

Step-by-Step

  1. In a large soup pot, heat olive oil over medium heat. Add onion and celery and saute for 10 minutes, stirring occasionally. Add remaining ingredients. Simmer for 30 minutes.
