This soup is full of flavor. I got this recipe from my mother in law, she has a wonderful little soup cookbook. We have loved every recipe we have tried.

Ingredients

celery, diced

vegetable stock

heavy cream

white wine

(14 oz each) artichoke hearts, drained and chopped
1/4 c
fresh lemon juice

fresh parsley, minced
1 tsp
salt
1/2 tsp
pepper

How to Make Artichoke Lemon Soup

Step-by-Step

  • 1In a large soup pot, heat olive oil over medium heat. Add onion and celery and saute for 10 minutes, stirring occasionally. Add remaining ingredients. Simmer for 30 minutes.
