Ingredients
- 1/4 cup vegetable oil
- 12 medium onions
- 1 pound mushrooms
- 8 cloves garlic, minced
- 3 quarts beef stock
- 1/2 pound blue cheese
- salt and pepper
How To Make 7 hour french onion soup w mushrooms & blue cheese

Step 1Coat a large pot with oil. Coarsely chop the onion and mushrooms. Add to the pot. Add the garlic. Add the beef stock then add water to about 2 inches from the top. Bring to a boil. Lower and simmer for 4 hours.

Step 2Add the blue cheese and continue to simmer for 3 more hours. Taste and adjust for salt and pepper.
