Ingredients
- 1 - roasted turkey carcass, broken into pieces
- 2.5 quarts cold water
- 3 - carrots, thickly sliced
- 3 - celery stalks with leaves, sliced
- 1 - chopped onion
- 1/2 cup chopped parsley
- 1 - bay leaf
- 1 teaspoon dried thyme, crushed
- 2.5 cups leftover turkey stuffing
- 2 cups turkey gravy
- - salt
How To Make turkey-stuffing soup

Step 1Combine turkey carcass, water, carrots, celery, onion, parsley, bay leaf, thyme, stuffing, gravy and salt in soup pot.

Step 2Place over medium heat and bring to boil, then reduce heat to simmer.

Step 3Stir and break up all clumps of stuffing.

Step 4Simmer, covered, about 1 1/2 hours.

Step 5Remove carcass, saving any meat that can be stripped, and add up to 1 1/2 cups of water if necessary to replace evaporation.

Step 6Adjust salt to taste.

Step 7Let simmer 10 more minutes.

Step 8Serve hot.
