roasted turkey carcass, broken into pieces
2.5 qt
cold water
carrots, thickly sliced
celery stalks with leaves, sliced
chopped onion
1/2 c
chopped parsley
bay leaf
1 tsp
dried thyme, crushed
2.5 c
leftover turkey stuffing
2 c
turkey gravy

How to Make Turkey-Stuffing Soup


  • 1Combine turkey carcass, water, carrots, celery, onion, parsley, bay leaf, thyme, stuffing, gravy and salt in soup pot.
  • 2Place over medium heat and bring to boil, then reduce heat to simmer.
  • 3Stir and break up all clumps of stuffing.
  • 4Simmer, covered, about 1 1/2 hours.
  • 5Remove carcass, saving any meat that can be stripped, and add up to 1 1/2 cups of water if necessary to replace evaporation.
  • 6Adjust salt to taste.
  • 7Let simmer 10 more minutes.
  • 8Serve hot.
