This soup is requested every year - and it's like Christmas or Thanksgiving all over again- everyone comes back the next day for turkey soup. Even my Bunco group wants some. So now you can make it too! I am sure you have your own version too so lets post them all!
remove most of the meat from turkey bones, reserving the meat. place the bones, wing tips any skin, neck and left over dressing, if any. the dressing is optional, but it does give great flavor to the soup. add all to a large soup kettle with enough
water to cover all in the kettle. bring all to a boil and boil fro 30 minutes. pour all contents through a strainer, reserving the broth. save any pieces of meat from strainer and place into kettle with the broth. discard all remaining in strainer.
broth, you should have this much in kettle already, then add the following:
raw carrots, cut into circles
a bay leaf
salt and pepper to taste
onion , diced
milk - this makes a nice and creamy soup
any other reserved turkey, cut up
your choice of combination of oregano, basil or thyme
1Add any amounts you like to compliment the amount of broth you have in the kettle. Cook all until vegetables are tender ,but not mushy. Remove bay leaf. Add noodles and cook until noodles are tender, but not mushy.
