My mother never wasted anything, even a leftover turkey carcass. She would boil the carcass in water and chicken or turkey broth and pick every bit of meat off the bone. Then she would make the best turkey noodle soup.

Ingredients

  • - leftover turkey
  • - leftover pan drippings from turkey
  • 1 - can whole kernel corn
  • 1 - can sliced carrots
  • 2 - 3 - diced potatoes
  • 1/2 - diced onion
  • - 2 - 3 cans 98% fat free chicken broth
  • - 1 low salt chicken boullion
  • 1/2 - 12 oz. pkg. noodles
  • 1/2 teaspoon marjoram, dried
  • 1/2 teaspoon parsley flakes
  • 1/2 teaspoon thyme, dried
  • 1/2 teaspoon mccormick seasoning salt or to taste

How To Make turkey noodle soup

  • Step 1
    Boil leftover turkey carcass in a large stockpot with chicken broth, boullion and seasonings. Remove carcass and pick rest of meat off the bone. Meanwhile, add potatoes, onion, and noodles to the boiling liquid and slowly boil until tender. Add turkey meat back to the liquid. Add canned vegetables and simmer until flavors blend. You may have to add more chicken broth if liquid gets too low. (I use whole wheat noodles.)
