Turkey meat balls soup is very welcome to my grandkids, they love noodles and potatoes.

Ingredients

  • 2lbs - turkey ground
  • 2 - eggs (beaten)
  • 1/2 - white onions (sliced)
  • 1/2 - green bell pepper (sliced)
  • 3 - roma tomatoes (cut up in chunks)
  • 1/2 cup olive oil, extra virgin
  • 1 tablespoon knorr chicken flavor
  • 1 teaspoon coarse sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon whole oregano
  • 8 cups water plus 4 more cups
  • 7 ounces whole grain spaghetti (break in half)
  • 2 medium potatoes (cut up in big chunks)

How To Make turkey meat balls (sopa de albondigas de pavo)

  • Step 1
    Meatball mixture: Combine in a large bowl ground turkey, beaten eggs, salt, black pepper, and oregano. Knead the mixture with your hands until well blended, Shape into 1/2 inch in diameter (about 12 to 14 balls)
  • Step 2
    In a big saucepan heal oil and sauteed the onions, bell pepper, and tomatoes until brown. In a big pot put 8 cups of water, 1 Tablespoon of Knorr chicken flavor, and pour the sauteed veggies and wait until is boiling. Damp the meat balls in the boiling pot wait about 3-5 minutes and then put the spaghetti, potatoes plus 4 more cups of water. Turn to slow heat and cook for about 30 minutes. Let set for 30 minutes and serve with crackers.
