I had never cooked with barley before this, and this soup quickly changed my mind! It is so good you will make turkey just to make this soup, not just wait for Thanksgiving leftovers!

Ingredients

  • 1 1/2 cups carrots, sliced
  • 1 1/2 cups mushrooms, sliced
  • 1 cup celery, sliced
  • 1 cup onion, chopped
  • 2 tablespoons oil
  • 9 cups turkey broth (i have used chicken broth also)
  • 2 cups turkey, cooked and cubed
  • 1/2 cup medium pearl barley
  • 2 - bay leaves
  • 1/4 teaspoon pepper

How To Make turkey barley soup

  • Step 1
    Saute carrot, mushrooms, celery and onion in oil until tender. Add remaining ingredients, bring to a boil. Reduce heat, cover and simmer 50-60 min or until barley is tender. Remove bay leaves before serving.
