Quick and Easy Turkey Noodle Soup

Since it was cold today I decided to make some turkey soup from leftover turkey and some broth I made from the bones and I didnt have noodles so I tried the Romaine noodles and it was very tastey,,

This soup has a terrific flavor... and is a great way to use up that leftover turkey! We loved being able to make such a creamy soup without having to add a drop of cream.


1 stick
butter or margarine
1 c
sliced thin carrots
1 c
sliced thin celery
1 c
2 c
diced cooked turkey or chicken
1 gal
chicken stock
2 pkg
roasted chicken romaine noodles plus the seasoning packs
1 Tbsp
salt and pepper
1 Tbsp
fresh or dried parsley
1/2 c
diced onion


1In a large stock pot add butter and melt.Add the onions and carrots and celery sautee until almost tender.Add the flour and brown for a few minutes (like making a gravy).Add the stock and stir unitl the flour is disolved and the mixture is creamy add the salt and pepper and the romaine noodle packs and seasoning and cook for a few minutes and then add the chicken or turkey and let simmer until the veggies are tender.Sprinkle in the parsley before serving.
2this is very good just served with bread or crackers,
