Ingredients
- 8 - 12 oz turkey sausage links, casing removed
- 1 1/2 cups onion, chopped
- 3/4 cup carrots, diced
- 1 pound dry lentils
- 3 quarts beef broth
- 28 ounces crushed tomatoes
- 1/2 teaspoon marjoram, dried
- 1/2 teaspoon thyme, leaves
- 1 - bay leaf
- 2-3 teaspoons lemon juice
- - salt and pepper, to taste
How To Make lentil soup

Step 1Sauté sausage, onions and carrots over medium heat, until sausage is browned, 8 minutes. Crumble sausage with a fork. Add lentils, broth, tomatoes and herbs; bring to a boil. Reduce heat and simmer, covered until lentils are tender, 30 minutes. Discard bay leaf; season with salt and pepper and add lemon juice.
