    12 oz turkey sausage links, casing removed
  • 1 1/2 c
    onion, chopped
  • 3/4 c
    carrots, diced
  • 1 lb
    dry lentils
  • 3 qt
    beef broth
  • 28 oz
    crushed tomatoes
  • 1/2 tsp
    marjoram, dried
  • 1/2 tsp
    thyme, leaves
  • 1
    bay leaf
  • 2-3 tsp
    lemon juice
  • ·
    salt and pepper, to taste

How to Make Lentil Soup


  1. Sauté sausage, onions and carrots over medium heat, until sausage is browned, 8 minutes. Crumble sausage with a fork. Add lentils, broth, tomatoes and herbs; bring to a boil. Reduce heat and simmer, covered until lentils are tender, 30 minutes. Discard bay leaf; season with salt and pepper and add lemon juice.
