water
1 c
chopped celery

chicken bouillon cubes
1/4 tsp
pepper
1 c
peas
1/2 c
chopped celery leaves
1 c
chopped onion
1 Tbsp
salt

bay leaf
1/2 c
parsley
1 c
sliced carrots
1 c
cut green beans
8 oz
noodles
1/4 c
flour
1/4 c
butter

How to Make Aunt Betty's (after Holidays)Turkey Soup

Step-by-Step

  • 1In large 8 qt kettle put in carcass, water, celery, leaves, onion, bouillon cubes, salt, pepper, and bay leaf. Heat to boiling; lower heat and simmer for 1 hour.
  • 2Remove carcass and let cool
  • 3Add parsley, peas, carrots and green beans - cook until tender.
  • 4Remove meat from carcass and return meat to broth. Heat to boiling and add noodles. Cook until tender.
  • 5Melt butter in skillet. Add flour and stir over low heat until flour is browned. Stir into boiling soup and simmer for about 5 minutes.
