Aunt Betty - great for cleaning out the refrigerator after the holidays!

Ingredients

  • 1 - leftover carcass from 12 to ? lb turkey
  • 5 quarts water
  • 1 cup chopped celery
  • 7 - chicken bouillon cubes
  • 1/4 teaspoon pepper
  • 1 cup peas
  • 1/2 cup chopped celery leaves
  • 1 cup chopped onion
  • 1 tablespoon salt
  • 1 - bay leaf
  • 1/2 cup parsley
  • 1 cup sliced carrots
  • 1 cup cut green beans
  • 8 ounces noodles
  • 1/4 cup flour
  • 1/4 cup butter

How To Make aunt betty's (after holidays)turkey soup

  • Step 1
    In large 8 qt kettle put in carcass, water, celery, leaves, onion, bouillon cubes, salt, pepper, and bay leaf. Heat to boiling; lower heat and simmer for 1 hour.
  • Step 2
    Remove carcass and let cool
  • Step 3
    Add parsley, peas, carrots and green beans - cook until tender.
  • Step 4
    Remove meat from carcass and return meat to broth. Heat to boiling and add noodles. Cook until tender.
  • Step 5
    Melt butter in skillet. Add flour and stir over low heat until flour is browned. Stir into boiling soup and simmer for about 5 minutes.
