    chopped celery
  • 7
    chicken bouillon cubes
  • 1/4 tsp
  • 1 c
  • 1/2 c
    chopped celery leaves
  • 1 c
    chopped onion
  • 1 Tbsp
  • 1
    bay leaf
  • 1/2 c
  • 1 c
    sliced carrots
  • 1 c
    cut green beans
  • 8 oz
  • 1/4 c
  • 1/4 c

How to Make Aunt Betty's (after Holidays)Turkey Soup


  1. In large 8 qt kettle put in carcass, water, celery, leaves, onion, bouillon cubes, salt, pepper, and bay leaf. Heat to boiling; lower heat and simmer for 1 hour.
  2. Remove carcass and let cool
  3. Add parsley, peas, carrots and green beans - cook until tender.
  4. Remove meat from carcass and return meat to broth. Heat to boiling and add noodles. Cook until tender.
  5. Melt butter in skillet. Add flour and stir over low heat until flour is browned. Stir into boiling soup and simmer for about 5 minutes.
