Ingredients
- 1 - leftover carcass from 12 to ? lb turkey
- 5 quarts water
- 1 cup chopped celery
- 7 - chicken bouillon cubes
- 1/4 teaspoon pepper
- 1 cup peas
- 1/2 cup chopped celery leaves
- 1 cup chopped onion
- 1 tablespoon salt
- 1 - bay leaf
- 1/2 cup parsley
- 1 cup sliced carrots
- 1 cup cut green beans
- 8 ounces noodles
- 1/4 cup flour
- 1/4 cup butter
How To Make aunt betty's (after holidays)turkey soup

Step 1In large 8 qt kettle put in carcass, water, celery, leaves, onion, bouillon cubes, salt, pepper, and bay leaf. Heat to boiling; lower heat and simmer for 1 hour.

Step 2Remove carcass and let cool

Step 3Add parsley, peas, carrots and green beans - cook until tender.

Step 4Remove meat from carcass and return meat to broth. Heat to boiling and add noodles. Cook until tender.

Step 5Melt butter in skillet. Add flour and stir over low heat until flour is browned. Stir into boiling soup and simmer for about 5 minutes.
