Ingredients

1leftover carcass from 12 to ? lb turkey

5 qtwater

1 cchopped celery

7chicken bouillon cubes

1/4 tsppepper

1 cpeas

1/2 cchopped celery leaves

1 cchopped onion

1 Tbspsalt

1bay leaf
-
1/2 cparsley

1 csliced carrots

1 ccut green beans

8 oznoodles

1/4 cflour

1/4 cbutter
How to Make Aunt Betty's (after Holidays)Turkey Soup
- In large 8 qt kettle put in carcass, water, celery, leaves, onion, bouillon cubes, salt, pepper, and bay leaf. Heat to boiling; lower heat and simmer for 1 hour.
- Remove carcass and let cool
- Add parsley, peas, carrots and green beans - cook until tender.
- Remove meat from carcass and return meat to broth. Heat to boiling and add noodles. Cook until tender.
- Melt butter in skillet. Add flour and stir over low heat until flour is browned. Stir into boiling soup and simmer for about 5 minutes.
