garlic, chopped
1 large
onion, diced
2 c
diced potatoes
1 c
diced celery
1 c
sliced zucchini
1 c
cut green beans
2 c
shredded cabbage
4 c
beef broth
2 c
2 c
peeled tomatoes
1 can(s)
(16 oz.) cannellini beans
1/2 lb
small shell pasta
chopped parsley and basil, optional
salt and pepper, optional

How to Make Vegetable Minestrone Soup


  • 1Saute garlic and onion. Add potatoes and celery, cook for 5 minutes

    Add broth and 2 cups water, bring to a boil. Add tomatoes and simmer for 10 minutes

    Add zucchini, beans, and cabbage. Bring to a boil. Add parsley, basil, and beans. Simmer 10 minutes
  • 2Stir in pasta and cook 8 to 10 minutes. Season with salt and pepper to taste.
  • 3Let stand 5 minutes before serving. Garnish with grated cheese.
