This is just a good hearty soup. It is filling, warm, and good. Living where I live, I always make it in the winter.

Ingredients

  • 1 pound pork sausage
  • 1 pound kielbasa, diced
  • 1 medium onion, diced
  • 2 stalks celery, diced (include some leaves if you have them)
  • 1 1/2 cups shredded carrot
  • 1 teaspoon dried thyme
  • 2 - bay leaves
  • 6 cups chicken stock, broth, or boullion
  • 1/3 cup dry white rice
  • 1 bag frozen chopped broccoli
  • 1 can 12 oz. evaporated milk
  • 10 slices american cheese
  • - salt and pepper to taste

How To Make sausage, rice, and broccoli soup

  • Step 1
    Dice all vegetables. Dice kielbasa. Set aside.
  • Step 2
    Brown pork sausage and drain. Add diced vegetables and saute until tender.
  • Step 3
    Add stock, thyme, and bay leaves. Bring to a simmer. Add rice.
  • Step 4
    Cook for a few minutes. Add diced kielbasa. Simmer until rice is tender. About 15-20 minutes.
  • Step 5
    Add evaporated milk and cheese. Cook gently until cheese is melted. Add broccoli and heat through. Serve.
  • Step 6
    If you want the broccoli to fall apart, add in step 3. If you want chunks, add in step 5.
