Ingredients
- 2 tablespoons margarine
- 3/4 cup chopped onion
- 1/4 cup chopped celery
- 1/2 cup grated carrots
- 1 cup shredded cabbage or thinly slivered kale
- 1-14.5 oz. can italian style petite diced tomatoes
- 2 tablespoons tomato paste
- 1 1/2 cups potatoes, cubed
- 4 cups chicken broth
- 2 cloves minced garlic
- 2 teaspoons dried parsley
- 1 teaspoon salt
- 1-14.5 oz. can navy or cannellini beans
- 1 cup elbow or small pasta
How To Make minestrone

Step 1Melt margarine in a large pot. Saute onion, celery and carrots for 5 or 10 minutes until vegetables start to soften.

Step 2Add the remainder of the ingredients, except the beans and pasta. Bring to a boil, reduce heat, cover and simmer for approximately 1 hour or until vegetables are just tender.

Step 3In a separate pan, cook pasta to al dente according to package direction.

Step 4Add beans and pasta to soup and heat just to boiling.
