Ingredients

  • 2 tablespoons margarine
  • 3/4 cup chopped onion
  • 1/4 cup chopped celery
  • 1/2 cup grated carrots
  • 1 cup shredded cabbage or thinly slivered kale
  • 1-14.5 oz. can italian style petite diced tomatoes
  • 2 tablespoons tomato paste
  • 1 1/2 cups potatoes, cubed
  • 4 cups chicken broth
  • 2 cloves minced garlic
  • 2 teaspoons dried parsley
  • 1 teaspoon salt
  • 1-14.5 oz. can navy or cannellini beans
  • 1 cup elbow or small pasta

How To Make minestrone

  • Step 1
    Melt margarine in a large pot. Saute onion, celery and carrots for 5 or 10 minutes until vegetables start to soften.
  • Step 2
    Add the remainder of the ingredients, except the beans and pasta. Bring to a boil, reduce heat, cover and simmer for approximately 1 hour or until vegetables are just tender.
  • Step 3
    In a separate pan, cook pasta to al dente according to package direction.
  • Step 4
    Add beans and pasta to soup and heat just to boiling.
