Ingredients

2 Tbspmargarine

3/4 cchopped onion

1/4 cchopped celery

1/2 cgrated carrots

1 cshredded cabbage or thinly slivered kale

1-14.5 oz. can(s)italian style petite diced tomatoes

1 1/2 cpotatoes, cubed

4 cchicken broth

2 cloveminced garlic

1-14.5 oz. can(s)navy or cannellini beans

1 celbow or small pasta
How to Make Minestrone
- Melt margarine in a large pot. Saute onion, celery and carrots for 5 or 10 minutes until vegetables start to soften.
- Add the remainder of the ingredients, except the beans and pasta. Bring to a boil, reduce heat, cover and simmer for approximately 1 hour or until vegetables are just tender.
- In a separate pan, cook pasta to al dente according to package direction.
- Add beans and pasta to soup and heat just to boiling.
