Slow Cooker Crock Pot

3/4 c
chopped onion
1/4 c
chopped celery
1/2 c
grated carrots
1 c
shredded cabbage or thinly slivered kale
1-14.5 oz. can(s)
italian style petite diced tomatoes
2 Tbsp
tomato paste
1 1/2 c
potatoes, cubed
4 c
chicken broth
2 clove
minced garlic
2 tsp
dried parsley
1 tsp
1-14.5 oz. can(s)
navy or cannellini beans
1 c
elbow or small pasta

How to Make Minestrone


  • 1Melt margarine in a large pot. Saute onion, celery and carrots for 5 or 10 minutes until vegetables start to soften.
  • 2Add the remainder of the ingredients, except the beans and pasta. Bring to a boil, reduce heat, cover and simmer for approximately 1 hour or until vegetables are just tender.
  • 3In a separate pan, cook pasta to al dente according to package direction.
  • 4Add beans and pasta to soup and heat just to boiling.
