irish potato soup
Have been making this for years. The bay leaf is what makes this one a little different from a lot of potato soups. *This can be adapted to be made in a crock pot, but will be just a bit thinner.

Ingredients
- 4 medium russet potatoes
- 1 quart water
- 2 medium onions, diced
- 1 - bay leaf
- 1/2 cup half and half
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 3 tablespoons butter
- 1/2 pound smoked sausage, sliced (optional)
How To Make irish potato soup

Step 1Peel and slice the potatoes. Put potatoes into a soup pot with water, onions, and bay leaf.

Step 2Simmer covered for 45 minutes.

Step 3Working in batches puree soup.

Step 4Add half and half, salt, and pepper. Also add the smoked sausage if using.

Step 5Cook for 15 minutes on LOW just until heated thoroughly WITHOUT boiling/scalding the half and half.

Step 6Add butter for flavor and richness and serve.
