Have been making this for years. The bay leaf is what makes this one a little different from a lot of potato soups. *This can be adapted to be made in a crock pot, but will be just a bit thinner.

Ingredients

  • 4 medium russet potatoes
  • 1 quart water
  • 2 medium onions, diced
  • 1 - bay leaf
  • 1/2 cup half and half
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 3 tablespoons butter
  • 1/2 pound smoked sausage, sliced (optional)

How To Make irish potato soup

  • Step 1
    Peel and slice the potatoes. Put potatoes into a soup pot with water, onions, and bay leaf.
  • Step 2
    Simmer covered for 45 minutes.
  • Step 3
    Working in batches puree soup.
  • Step 4
    Add half and half, salt, and pepper. Also add the smoked sausage if using.
  • Step 5
    Cook for 15 minutes on LOW just until heated thoroughly WITHOUT boiling/scalding the half and half.
  • Step 6
    Add butter for flavor and richness and serve.
