There is a big German population in Texas, especially in the Texas Hill Country. This is one of the recipes that I have from the Hill Country.

  • 3 c
    shredded, green cabbage
  • 1 c
  • 4 Tbsp
    chopped onion
  • 1/2 tsp
    caraway seeds
  • 4 Tbsp
  • 2 can(s)
    condensed cream of potato soup
  • ·
    white pepper, to taste
  • 2
    soup cans of water

How to Make Hill Country Potato Soup


  1. In a Dutch oven, cook cabbage, water, onion, and caraway seed in melted butter until tender, about 15 minutes.
  2. Add soup and pepper.

    Pour into a blender or food processor and blend until smooth.
  3. Return mixture to saucepan; gradually stir in milk. Heat and stir occasionally. Thin to desired consistency by adding milk.
