THIS IS AN EASY RECIPE COMES TOGETHER IN 20 MIN...TASTY N FILLING n JUST IN TIME FOR THE COLD WEATHER BRRRRRRR :)

Ingredients

  • 2 tablespoons olive oil
  • 5 slices bacon, choppd
  • 1 medium onion, choppd
  • 2 stalks celery, choppd
  • 2 cloves garlic, smashd
  • 1 large zucchini, diced
  • 1 large bay leaf
  • 1/2 teaspoon salt
  • 1/4 teaspoon blk pepper
  • 6 cups chickn broth
  • 1 can garbanzo beans (not draind 15 oz)
  • 1 can white cannellini beans ( not draind 15 oz)
  • 1 cup fresh green beans 1 1/2 " pieces (can use more)
  • 1 cup any small pasta (mini penne, ditalini or mini shells)
  • 6 large leaves of basil torn or a tsp of pesto
  • 2 cups fresh spinach, washd n torn
  • 1 cup parmesan cheese, divided

How To Make green minestrone

  • Step 1
    HEAT OLIVE OIL IN LARGE POT N ADD CHOPPD BACON N COOK FOR 3 MINUTES.
  • Step 2
    NOW ADD ONIONS, CELERY, GARLIC, BAY LEAF, AND ZUCCHINI N SEASON WITH S n P. STIRRING N COOK FOR 5 MINUTES
  • Step 3
    ADD WHITE BEANS N GARBANZO BEANS N CHICKN BROTH COVER N BRING TO A BOIL.
  • Step 4
    ADD PASTA N GREEN BEANS N COOK FOR 8 MORE MINUTES. REMOVE BAY LEAVES!
  • Step 5
    STIR IN SPINACH TO WILT ...ONE MORE MINUTE.
  • Step 6
    STIR IN 1/2 CUP GRATED CHEESE (OTHER 1/2CUP FOR INDIVIDUAL BOWLS) n STIR IN BASIL OR PESTO IF USING (I USED A FROZEN CHUNK OF PESTO ;)
  • Step 7
    LADLE INTO BOWLS N TOP WITH GRATD CHEESE...ENJOY :)
