My mom's Gazpacho recipe is refreshing and perfect for summer time. It tastes fresh and is very delicious. Enjoy!

Ingredients

  • 2 cups v-8 juice (we like spicy v-8), divided
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 - chicken bouillon cube
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 3 dashes hot sauce (optional)
  • 1 - ripe tomato, peeled and cubed
  • 1 cup cucumber, peeled and diced
  • 1/4 cup green bell pepper, chopped
  • 1/4 cup onion, sliced

How To Make gazpacho

  • Step 1
    In food processor combine 1 cup of V-8 juice and next seven ingredients. Process for a few seconds to mix.
  • Step 2
    Add tomato, cucumber, green pepper, and onion. Process until evenly chopped, but do not puree.
  • Step 3
    Add remaining cup of V-8. Pour into covered one-quart container, and chill. 4 hours or overnight.
  • Step 4
    Garnish with croutons, if desired.
