My mom's Gazpacho recipe is refreshing and perfect for summer time. It tastes fresh and is very delicious. Enjoy!

Food Processor


  • 2 c
    v-8 juice (we like spicy v-8), divided
  • 2 Tbsp
    olive oil
  • 2 Tbsp
    red wine vinegar
  • 1
    chicken bouillon cube
  • 1/2 tsp
    garlic powder
  • 1/2 tsp
  • 1/8 tsp
  • 3 dash(es)
    hot sauce (optional)
  • 1
    ripe tomato, peeled and cubed
  • 1 c
    cucumber, peeled and diced
  • 1/4 c
    green bell pepper, chopped
  • 1/4 c
    onion, sliced

How to Make Gazpacho


  1. In food processor combine 1 cup of V-8 juice and next seven ingredients. Process for a few seconds to mix.
  2. Add tomato, cucumber, green pepper, and onion. Process until evenly chopped, but do not puree.
  3. Add remaining cup of V-8. Pour into covered one-quart container, and chill. 4 hours or overnight.
  4. Garnish with croutons, if desired.
