My mom's Gazpacho recipe is refreshing and perfect for summer time. It tastes fresh and is very delicious. Enjoy!

2 c
v-8 juice (we like spicy v-8), divided
2 Tbsp
olive oil
2 Tbsp
red wine vinegar
chicken bouillon cube
1/2 tsp
garlic powder
1/2 tsp
1/8 tsp
3 dash(es)
hot sauce (optional)
ripe tomato, peeled and cubed
1 c
cucumber, peeled and diced
1/4 c
green bell pepper, chopped
1/4 c
onion, sliced

How to Make Gazpacho


  • 1In food processor combine 1 cup of V-8 juice and next seven ingredients. Process for a few seconds to mix.
  • 2Add tomato, cucumber, green pepper, and onion. Process until evenly chopped, but do not puree.
  • 3Add remaining cup of V-8. Pour into covered one-quart container, and chill. 4 hours or overnight.
  • 4Garnish with croutons, if desired.
