Ingredients
- 2 cups v-8 juice (we like spicy v-8), divided
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 - chicken bouillon cube
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 3 dashes hot sauce (optional)
- 1 - ripe tomato, peeled and cubed
- 1 cup cucumber, peeled and diced
- 1/4 cup green bell pepper, chopped
- 1/4 cup onion, sliced
How To Make gazpacho

Step 1In food processor combine 1 cup of V-8 juice and next seven ingredients. Process for a few seconds to mix.

Step 2Add tomato, cucumber, green pepper, and onion. Process until evenly chopped, but do not puree.

Step 3Add remaining cup of V-8. Pour into covered one-quart container, and chill. 4 hours or overnight.

Step 4Garnish with croutons, if desired.
