This soup is a fast day soup (meatless). It is good any day of the week.

Ingredients

  • 6 - cucumbers, peeled, sliced
  • 6 - white part or heart of lettuce, cut up
  • 6 sprigs mint, or parsley, cut up
  • 1 quart young green peas (or tomatoes, peeled & quartered)
  • - water
  • - salt and pepper
  • 1/2 pound butter, cut into 6 pieces and dredged in flour
  • dash cayenne
  • 8 ounces pounded spinach juice, for color
  • 2 - onions, sliced

How To Make friday soup

  • Step 1
    In a soup pot add cucumbers, lettuce, onions, mint, peas; add as much water to more than cover ingredients. Season slightly with cayenne, salt and pepper; add butter.
  • Step 2
    Boil 1 1/2 hours. In the last 20 minutes of cooking add spinach juice. Serve unstrained.
