Ingredients

  • 2 - beets, scrubbed
  • 1 tablespoon butter
  • 1 tablespoon chopped onion
  • 1 tablespoon flour
  • 1 pint hot white stock
  • 4 - pepper corns
  • - blade of mace
  • 1 teaspoon salt
  • 1 pint hot milk
  • 1 cup cream

How To Make cream of beet soup

  • Step 1
    Cook beets without cutting them. When they are tender; drop in cold water 2-3 minutes, then remove skin and rub through strainer. Set aside.
  • Step 2
    Cook butter with onions; five minutes. Add flour and when boiling; slowly pour in hot stock; add flour, peppercorns, mace and salt; simmer 10 minutes. Add hot milk, strained beets and cream.
