- 2 - beets, scrubbed
- 1 tablespoon butter
- 1 tablespoon chopped onion
- 1 tablespoon flour
- 1 pint hot white stock
- 4 - pepper corns
- - blade of mace
- 1 teaspoon salt
- 1 pint hot milk
- 1 cup cream
How To Make cream of beet soup

Step 1Cook beets without cutting them. When they are tender; drop in cold water 2-3 minutes, then remove skin and rub through strainer. Set aside.

Step 2Cook butter with onions; five minutes. Add flour and when boiling; slowly pour in hot stock; add flour, peppercorns, mace and salt; simmer 10 minutes. Add hot milk, strained beets and cream.
