butter
1 Tbsp
chopped onion
1 Tbsp
flour
1 pt
hot white stock

pepper corns
blade of mace
1 tsp
salt
1 pt
hot milk
1 c
cream

How to Make Cream of Beet Soup

Step-by-Step

  • 1Cook beets without cutting them. When they are tender; drop in cold water 2-3 minutes, then remove skin and rub through strainer. Set aside.
  • 2Cook butter with onions; five minutes. Add flour and when boiling; slowly pour in hot stock; add flour, peppercorns, mace and salt; simmer 10 minutes. Add hot milk, strained beets and cream.
