  • 1 Tbsp
  • 1 Tbsp
    chopped onion
  • 1 Tbsp
  • 1 pt
    hot white stock
  • 4
    pepper corns
  • ·
    blade of mace
  • 1 tsp
  • 1 pt
    hot milk
  • 1 c

How to Make Cream of Beet Soup


  1. Cook beets without cutting them. When they are tender; drop in cold water 2-3 minutes, then remove skin and rub through strainer. Set aside.
  2. Cook butter with onions; five minutes. Add flour and when boiling; slowly pour in hot stock; add flour, peppercorns, mace and salt; simmer 10 minutes. Add hot milk, strained beets and cream.
