Ingredients
- 3 tablespoons butter
- 3 tablespoons flour
- 3 cups chicken stock
- 2 cups milk
- 1/4 pound bleu cheese - crumbled (gorgonzola works well)
- 1 cup half and half
- 1/4 teaspoon salt
- 1/4 teaspoon white pepper
- 1/4 cup chives (chopped)
- 1 cup mushrooms, sliced
How To Make bleu cheese soup

Step 1Melt butter, whisk in flour. Whisk until flour is absorbed.

Step 2Stir in 1 cup of the stock. Cook over medium heat until thickened.

Step 3Add remaining stock and milk. Simmer 10 minutes.

Step 4Stir in cheese, half and half and season to taste. Add chives and mushrooms.
