A friend shared this with me 30+ years ago. It has been a favorite ever since.

Ingredients

  • 3 tablespoons butter
  • 3 tablespoons flour
  • 3 cups chicken stock
  • 2 cups milk
  • 1/4 pound bleu cheese - crumbled (gorgonzola works well)
  • 1 cup half and half
  • 1/4 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1/4 cup chives (chopped)
  • 1 cup mushrooms, sliced

How To Make bleu cheese soup

  • Step 1
    Melt butter, whisk in flour. Whisk until flour is absorbed.
  • Step 2
    Stir in 1 cup of the stock. Cook over medium heat until thickened.
  • Step 3
    Add remaining stock and milk. Simmer 10 minutes.
  • Step 4
    Stir in cheese, half and half and season to taste. Add chives and mushrooms.
