Ingredients

3 Tbsp
butter
3 Tbsp
flour
3 c
chicken stock
2 c
milk
1/4 lb
bleu cheese - crumbled (gorgonzola works well)
1 c
half and half
1/4 tsp
salt
1/4 tsp
white pepper
1/4 c
chives (chopped)
1 c
mushrooms, sliced

How to Make Bleu Cheese Soup

Step-by-Step

  • 1Melt butter, whisk in flour. Whisk until flour is absorbed.
  • 2Stir in 1 cup of the stock. Cook over medium heat until thickened.
  • 3Add remaining stock and milk. Simmer 10 minutes.
  • 4Stir in cheese, half and half and season to taste. Add chives and mushrooms.
