bleu cheese - crumbled (gorgonzola works well)
How to Make Bleu Cheese Soup
1Melt butter, whisk in flour. Whisk until flour is absorbed.
2Stir in 1 cup of the stock. Cook over medium heat until thickened.
3Add remaining stock and milk. Simmer 10 minutes.
4Stir in cheese, half and half and season to taste. Add chives and mushrooms.
