This recipe was posted as a copycat recipe; however, I think it tastes exactly like the restaurant version. Definitely worth the extra calories. : )

Ingredients

  • 1 1/2 pounds fresh broccoli
  • 2 cups water
  • 3/4 teaspoon salt
  • 1/2 cup cornstarch
  • 1 cup cold water
  • 1 pint half and half
  • 1 pound velveeta cheese
  • 1/2 teaspoon pepper

How To Make black-eyed pea restaurant broccoli-cheese soup

  • Step 1
    Steam or boil broccoli until tender. .
  • Step 2
    Place half and half and 2 cups water in top of a double boiler. Add cheese, salt and pepper. Heat until cheese is melted. Chop broccoli into bite-size pieces and add to cheese mixture.
  • Step 3
    Mix corntarch and water in small bowl. Stir into cheese mixture in double boiler and heat over simmering water until soup thickens.
