This came from a friend in New Orleans. She swore it came from a New Orleans chef (but would never tell us the name!). All I know is that we all tried to get invited over for lunch any weekend she mentioned she was making it!

medium onion, chopped
1/2 c
chopped celery
1/2 c
minced parsley
1 tsp
minced garlic
1/8 c
1 qt
oysters (liquid reserved)
1 1/2 can(s)
artichoke hearts, drained and chopped
1 c
heavy cream
1/2 Tbsp
1 Tbsp
freshly ground pepper
1/4 tsp
cayenne pepper
1 tsp
dried thyme
1 qt
chicken stock

How to Make Oyster-artichoke Soup


  • 1In large pot, melt butter, then sauté onion, celery, parsley and garlic about 5 minutes.
  • 2Add flour and cook 5 more minutes.
  • 3Add oyster liquid, chicken stock, and thyme to mixture and cook 10 minutes.
  • 4Mince oysters and add to pot, along with the cream, salt, pepper and cayenne. Heat and simmer 10 more minutes.
