oyster-artichoke soup
This came from a friend in New Orleans. She swore it came from a New Orleans chef (but would never tell us the name!). All I know is that we all tried to get invited over for lunch any weekend she mentioned she was making it!

Ingredients
- 1 cup butter
- 1/2 - medium onion, chopped
- 1/2 cup chopped celery
- 1/2 cup minced parsley
- 1 teaspoon minced garlic
- 1/8 cup flour
- 1 quart oysters (liquid reserved)
- 1 1/2 cans artichoke hearts, drained and chopped
- 1 cup heavy cream
- 1/2 tablespoon salt
- 1 tablespoon freshly ground pepper
- 1/4 teaspoon cayenne pepper
- 1 teaspoon dried thyme
- 1 quart chicken stock
How To Make oyster-artichoke soup

Step 1In large pot, melt butter, then sauté onion, celery, parsley and garlic about 5 minutes.

Step 2Add flour and cook 5 more minutes.

Step 3Add oyster liquid, chicken stock, and thyme to mixture and cook 10 minutes.

Step 4Mince oysters and add to pot, along with the cream, salt, pepper and cayenne. Heat and simmer 10 more minutes.
