This came from a friend in New Orleans. She swore it came from a New Orleans chef (but would never tell us the name!). All I know is that we all tried to get invited over for lunch any weekend she mentioned she was making it!

Ingredients For oyster-artichoke soup

  • 1 c
    butter
  • 1/2
    medium onion, chopped
  • 1/2 c
    chopped celery
  • 1/2 c
    minced parsley
  • 1 tsp
    minced garlic
  • 1/8 c
    flour
  • 1 qt
    oysters (liquid reserved)
  • 1 1/2 can
    artichoke hearts, drained and chopped
  • 1 c
    heavy cream
  • 1/2 Tbsp
    salt
  • 1 Tbsp
    freshly ground pepper
  • 1/4 tsp
    cayenne pepper
  • 1 tsp
    dried thyme
  • 1 qt
    chicken stock

How To Make oyster-artichoke soup

    In large pot, melt butter, then sauté onion, celery, parsley and garlic about 5 minutes.

    Add flour and cook 5 more minutes.

    Add oyster liquid, chicken stock, and thyme to mixture and cook 10 minutes.

    Mince oysters and add to pot, along with the cream, salt, pepper and cayenne. Heat and simmer 10 more minutes.
