This soup is very hearty.It's like a meal by it's self. We just have a sandwich with it. 1/26/14

Ingredients

  • 2 cups chicken broth, low salt
  • 2 pounds baked potatoes cubed
  • 1 1/2 cups celery ( diced )
  • 1 medium carrot, shredded
  • 1 tablespoon white vinegar
  • 1 cup milk
  • 1 cup half and half
  • 1 cup cheddar cheese, shredded
  • 1 cup monterey jack cheese shredded
  • 6 slices bacon cooked and crumbled
  • 2 tablespoons flour

How To Make loaded baked potato soup

  • Step 1
    Bring first 4 ingredients to a boil in a saucepan over medium-high heat.
  • Step 2
    Cover and simmer over medium-low heat for 20 minutes, stirring occasionally.
  • Step 3
    Whisk milk/flour mixture into sauce; stir in cheese and bacon.
  • Step 4
    Simmer, uncovered, 5-8 minutes, or until thick, stirring constantly.
