lasagna soup
I found this in my Mom's recipe collection and tweeked it to our liking. Sometimes I put all fresh ingredients if I have a little more time. I make it with a salad and it is very filling and always requested at home and gatherings. I even make extra to share at work.

Ingredients
- 1 pound hamburger, pork or italian sausage
- 1 large onion
- 2 - green bell peppers
- 4 cloves garlic, pressed
- 64 ounces chicken broth
- 2 cans 14.5 oz diced tomatoes
- 1 can 15 oz tomatoe sauce
- 4 tablespoons italian seasoning
- 2 teaspoons kosher salt
- 1 teaspoon ground black pepper
- 1 1/2 teaspoons garlic salt
- 1/4 teaspoon crushed red pepper
- 1 tablespoon dried or fresh basil
- 8 - pieces of lasagna noodles broken into bite sized pieces
- 1 cup parmesan cheese, grated
- 1 1/2 cups mozzarella cheese, shredded
- 1/2 cup spaghetti sauce
How To Make lasagna soup

Step 1In a large soup pot, brown ground meat of your choice with onion, green pepper and garlic. Add chicken broth, tomatoes, tomato sauce, spaghetti sauce and seasonings. Bring to boil over medium high heat. Boil 2 minutes, then reduce to a simmer and cook for 30 minutes, covered. Stir occasionally.

Step 2Add bite sized lasagna noodles to soup and cook until tender (about 15 minutes).

Step 3When ready to serve, mix in the grated parmesan cheese. Ladle into individual bowls and sprinkle with shredded mozzarella cheese.
