Just started using this recipe this last year. We have had many of our family and friends eating this with us, I hope they really like it because its all I've been making lately, like I can't get enough of it. LOL

Ingredients

  • 1/4 pound ground beef
  • 1/4 pound pork sausage
  • 1 large egg slightly beaten
  • 2 tablespoons bread crumbs
  • 1 tablespoon parmesan cheese
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon onion powder
  • 5 3/4 cups chicken broth
  • 2 cups spinach chopped
  • 1/2 cup acini di pepe pasta
  • 1/3 cup carrot finley chopped
  • - grated parmesan cheese grated

How To Make italian wedding soup

  • Step 1
    In medium bowl combine meat,egg, bread crumbs, Parmesan cheese, basil and onion powder, mix well and then shape into little balls about 1/2 inch. I sort of cook these just to get a little brown around them.
  • Step 2
    In large stock pot heat broth to a boil,then stir in pasta, carrot, meatballs and chopped spinach, cook until pasta is done about 15 minutes. Stir often so pasta doesn't stick to bottom of pan.
  • Step 3
    Serve with a good crusty bread and grate Parmesan cheese on top of your soup. Enjoy
