Just started using this recipe this last year. We have had many of our family and friends eating this with us, I hope they really like it because its all I've been making lately, like I can't get enough of it. LOL

Ingredients

  • 1/4 lb
    ground beef
  • 1/4 lb
    pork sausage
  • 1 large
    egg slightly beaten
  • 2 Tbsp
    bread crumbs
  • 1 Tbsp
    parmesan cheese
  • 1/2 tsp
    dried basil
  • 1/2 tsp
    onion powder
  • 5 3/4 c
    chicken broth
  • 2 c
    spinach chopped
  • 1/2 c
    acini di pepe pasta
  • 1/3 c
    carrot finley chopped
  • ·
    grated parmesan cheese grated

How to Make Italian Wedding Soup

Step-by-Step

  1. In medium bowl combine meat,egg, bread crumbs, Parmesan cheese, basil and onion powder, mix well and then shape into little balls about 1/2 inch. I sort of cook these just to get a little brown around them.
  2. In large stock pot heat broth to a boil,then stir in pasta, carrot, meatballs and chopped spinach, cook until pasta is done about 15 minutes. Stir often so pasta doesn't stick to bottom of pan.
  3. Serve with a good crusty bread and grate Parmesan cheese on top of your soup. Enjoy
