This soup it great for lunch or dinner. I serve it with a nice salad a garlic bread.

Ingredients

  • FOR THE MEATBALLS
  • 1/2 pound ground beef
  • 1/2 pound ground pork
  • 1/2 cup bread crumbs
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1/8 teaspoon garlic powder
  • 2 - eggs, beaten
  • 1 tablespoon parsley
  • 1/2 teaspoon onion powder
  • FOR THE SOUP
  • 8 cups chicken broth
  • 1 1/2 cups fresh spinach, shredded
  • 1 large carrot, diced
  • 1 cup uncooked tubettini pasta (or other small pasta)
  • - salt and pepper to taste

How To Make italian wedding soup

  • Step 1
    For Meatballs:
  • Step 2
    Place all ingredients in a bowl and blend well.
  • Step 3
    Form into 1/2 inch balls.
  • Step 4
    For the Soup:
  • Step 5
    Place broth in a large pot. Bring it to a boil.
  • Step 6
    Add meatballs and carrots. Reduce heat to medium.Cook for 10 minutes.
  • Step 7
    Add salt and pepper to taste.
  • Step 8
    Add pasta and spinach and simmer for another 10 minutes or until pasta is done.
