This soup it great for lunch or dinner. I serve it with a nice salad a garlic bread.

Ingredients

FOR THE MEATBALLS

1/2 lb
ground beef
1/2 lb
ground pork
1/2 c
bread crumbs
1/4 c
grated parmesan cheese
1 tsp
oregano
1 tsp
basil
1/8 tsp
garlic powder
2
eggs, beaten
1 Tbsp
parsley
1/2 tsp
onion powder

FOR THE SOUP

8 c
chicken broth
1 1/2 c
fresh spinach, shredded
1 large
carrot, diced
1 c
uncooked tubettini pasta (or other small pasta)
salt and pepper to taste

Step-by-Step

  • 1For Meatballs:
  • 2Place all ingredients in a bowl and blend well.
  • 3Form into 1/2 inch balls.
  • 4For the Soup:
  • 5Place broth in a large pot. Bring it to a boil.
  • 6Add meatballs and carrots. Reduce heat to medium.Cook for 10 minutes.
  • 7Add salt and pepper to taste.
  • 8Add pasta and spinach and simmer for another 10 minutes or until pasta is done.
