Ingredients

  • 1/4 lb
    bulk italian sausage
  • 1/2 c
    mushrooms, sliced
  • 1/2 c
    zucchini, sliced
  • 1/4 c
    onion, chopped
  • 1 tsp
    olive oil
  • 1 clove
    garlic, minced
  • 1 1/4 c
    chicken broth
  • 1 c
    canned diced tomatoes, undrained
  • 1/2 tsp
    dried basil
  • 1/8 tsp
    pepper
  • 3 Tbsp
    uncooked orzo

How to Make Italian Sausage Orzo Soup

Step-by-Step

  1. In a large saucepan, cook the sausage, mushrooms, zucchini and onion in oil over medium heat until the meat is no longer pink. Add garlic; cook 1 minute longer.
  2. Add the broth, tomatoes, basil and pepper. Bring to a boil. Stir in pasta.
  3. Reduce heat; cover and simmer for 15-20 minutes or until pasta is tender.
