I love tomato soup and grilled cheese sandwiches...especially in the winter. Since my friend Eileen gave me this recipe, I no longer buy Campbell's Tomato soup because this is so much better!

28oz. crushed tomatoes

beef bouillon, cubes
1 Tbsp
sugar

bay leaf
1/4 tsp
dried basil
1/4 tsp
pepper
1 stick
butter
1/3 c
flour
4 c
milk

How to Make Homemade Tomato Bisque (soup)

Step-by-Step

  • 1Combine first 6 ingredients in large pan. Bring to a boil, then reduce heat and simmer, uncovered for 30 min.
  • 2In another medium pan melt butter and add the flour, blend and cook over medium heat. Stir constantly. Cook until bubbly. Add 4 cups of milk and bring to a simmer stirring constantly. Cook for 2 minutes then add to tomato mixture and blend and heat through. If you prefer this thinner, you could add more milk or a little half & half.
  • 3Serve with grilled cheese sandwiches or crackers. The consistence of this soup is so satisfying and filling.
