I had baked potatoes left over and couldn't decide what to make. I had a box of Queso Blanco and decided to make this. It turn out wonderful. If it is to thick for your taste either add more chicken broth or add less cheese.
1Fry the bacon until crisp then crumble it and set it to the side.
2Peel potatoes and chop them and set them to the side.
3Chop the onion, now take 2 tablespoons of bacon grease and cook onions till carmelized.
4Now take chicken broth, heavy cream, sour cream, garlic, basil, parsley, salt & pepper, and butter. Place in kettle on low burner. Add onions and potatoes, then gradually add shredded cheese. When cheese is added cook on low for about 30 minutes.
