zelda's cheesey bacon potato soup

I had baked potatoes left over and couldn't decide what to make. I had a box of Queso Blanco and decided to make this. It turn out wonderful. If it is to thick for your taste either add more chicken broth or add less cheese.

Ingredients

  • 6 medium baked potatoes, skinned & diced
  • 1 pound bacon, cooked & crumbled
  • 1 large onion, diced
  • 4 cups chicken stock
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • 1 pound white american or queso blanco cheese shredded
  • 2 tablespoons bacon grease
  • 2 tablespoons butter
  • 1 teaspoon salt & pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley

How To Make zelda's cheesey bacon potato soup

  • Step 1
    Fry the bacon until crisp then crumble it and set it to the side.
  • Step 2
    Peel potatoes and chop them and set them to the side.
  • Step 3
    Chop the onion, now take 2 tablespoons of bacon grease and cook onions till carmelized.
  • Step 4
    Now take chicken broth, heavy cream, sour cream, garlic, basil, parsley, salt & pepper, and butter. Place in kettle on low burner. Add onions and potatoes, then gradually add shredded cheese. When cheese is added cook on low for about 30 minutes.
