Thanks to the potato flakes, it gets real thick and creamy, Great for these colder nights.

Ingredients

1-1/2 c
diced onion
1/2 stick
butter
1/2 tsp
each, salt & pepper
1
carrot, grated
2 c
water
4 c
potatoes, diced
1 tsp
dried dillweed
3 c
milk
1/4 c
potato flakes
2 Tbsp
chopped parsley

Step-By-Step

1Add butter to lg pot, over medium heat. Add onion and cook until browned. Add potatoes, carrot, water, salt, peppper and dillweed.
2Reduce heat to low and cook, stirring occasionally for 45 mins, or until potatoes are creamy. Stir in milk and parsley.
3Stir in potato flakes and heat through.
