This is one of our favorite potato soups.

I got it from a cookbook called Mystic Mountain Memories by Josie and Jerry Minerich.

  • 2 medium
    red potatoes
  • 3 to 4 c
  • 1 can(s)
    cream of mushroom soup
  • 1/2 lb
    cheddar cheese , diced
  • 1/2 tsp
    garlic salt
  • 1/2 tsp
    seasoning salt
  • 1/2 tsp
  • 1/2 tsp
  • 2 tsp
    parsley flakes
  • dash(es)

How to Make Souper Gomer's


  1. Scrub or peel potatoes. ( I usually peel mine.)
    Cut into pieces and boil only until potatoes are tender.
  2. Drain and mash slightly with fork, leaving chunky.
  3. In the same pan, add milk, soup and seasonings, stirring until heated thoroughly. Do not boil.
  4. Stir in cheese until melted. Taste it and add more cheese or seasoning if desired.
