Made this last night. It really hits the spot on a cold winter evening. It was a hit! We had a cold one for Florida (50's)..LOL

Ingredients

  • 2 1/2 pounds potatoes
  • - water
  • 1 pint heavy cream
  • 1 large yellow onion
  • 5 cloves garlic
  • - salt and pepper to taste
  • 1 package instant potatoes
  • 1/2 cup cooking sherry
  • - grated cheddar cheese

How To Make potato soup

  • Step 1
    Peel and dice potato (1 inch pieces)
  • Step 2
    Rinse till water comes clear.
  • Step 3
    Place in a large pot and just cover with water.
  • Step 4
    Add diced onion and minced garlic, salt and pepper
  • Step 5
    Bring to a boil and reduce to a fast simmer
  • Step 6
    Cook until potatoes are tender
  • Step 7
    Add cream and instant potatoes and combine, add sherry and simmer till everything has heated through
  • Step 8
    Note: If the soup is to thick add milk Can add a handful of cheddar cheese to each bowl (it makes a great addition)
