This is a big family favorite in cold weather. It is a great dish to take to pot luck dinners with family or friends.

  • 1 Tbsp
    olive oil, extra virgin
  • 1 c
    crisp bacon bits
  • 1/2 c
    onions finely chopped
  • 1 tsp
    garlic minced
  • 3 c
    chicken broth
  • 6 c
    diced potatoes
  • 1 Tbsp
    tony's seasoning
  • 1
    bay leaf
  • 1 can(s)
    canned milk
  • 1 c
    cream or half & half
  • 2 Tbsp
    butter real
  • 1/4 c

How to Make Potato Soup


  1. In a large pot add oil, and fry bacon until crispy. Drain on paper towels.
  2. In bacon grease add onions, cook until they start to turn clear then add garlic cook for about 4 min,
  3. add your chicken broth and potatoes to pot. Add tony's and bay leaf. Cook until potatoes or just tender then add can milk, cream and butter
  4. To thicken take out one cup of potatoes and mash and add to soup. We like it with a thinner broth, if you like it thick mash more potatoes.
  5. let simmer until hot ( DO NOT LET BOIL )
  6. Remove bay leaf. Add parsley
  7. Serve with chopped bacon and shredded cheese
