This is a big family favorite in cold weather. It is a great dish to take to pot luck dinners with family or friends.

Ingredients

  • 1 tablespoon olive oil, extra virgin
  • 1 cup crisp bacon bits
  • 1/2 cup onions finely chopped
  • 1 teaspoon garlic minced
  • 3 cups chicken broth
  • 6 cups diced potatoes
  • 1 tablespoon tony's seasoning
  • 1 - bay leaf
  • 1 can canned milk
  • 1 cup cream or half & half
  • 2 tablespoons butter real
  • 1/4 cup parsley

How To Make potato soup

  • Step 1
    In a large pot add oil, and fry bacon until crispy. Drain on paper towels.
  • Step 2
    In bacon grease add onions, cook until they start to turn clear then add garlic cook for about 4 min,
  • Step 3
    add your chicken broth and potatoes to pot. Add tony's and bay leaf. Cook until potatoes or just tender then add can milk, cream and butter
  • Step 4
    To thicken take out one cup of potatoes and mash and add to soup. We like it with a thinner broth, if you like it thick mash more potatoes.
  • Step 5
    let simmer until hot ( DO NOT LET BOIL )
  • Step 6
    Remove bay leaf. Add parsley
  • Step 7
    Serve with chopped bacon and shredded cheese
