This is a big family favorite in cold weather. It is a great dish to take to pot luck dinners with family or friends.

olive oil, extra virgin
1 c
crisp bacon bits
1/2 c
onions finely chopped
1 tsp
garlic minced
3 c
chicken broth
6 c
diced potatoes
1 Tbsp
tony's seasoning
bay leaf
1 can(s)
canned milk
1 c
cream or half & half
2 Tbsp
butter real
1/4 c

How to Make Potato Soup


  • 1In a large pot add oil, and fry bacon until crispy. Drain on paper towels.
  • 2In bacon grease add onions, cook until they start to turn clear then add garlic cook for about 4 min,
  • 3add your chicken broth and potatoes to pot. Add tony's and bay leaf. Cook until potatoes or just tender then add can milk, cream and butter
  • 4To thicken take out one cup of potatoes and mash and add to soup. We like it with a thinner broth, if you like it thick mash more potatoes.
  • 5let simmer until hot ( DO NOT LET BOIL )
  • 6Remove bay leaf. Add parsley
  • 7Serve with chopped bacon and shredded cheese
