I love soups! I love potato soup, and I love fresh dill. This is everything I love rolled into one.

potatos, peeled and cubed
2 large
onions, chopped
1 bunch
scallions, chopped
3 bunch
or more fresh dill
2 Tbsp
1 pt
heavy cream
2 c
sour cream
white pepper, to taste
salt, to taste
fresh parsley for garnish, chopped
fresh dill for garnish

How to Make Potato Dill Soup


  • 1In a large stock pot or Dutch oven cook potatoes and onions in boiling water until potatoes start to fall apart. Strain and return to pot.
  • 2Add scallions, dill, butter and cream. Cook 10 minutes.
  • 3Stir in 1 cup sour cream, white pepper, and salt. Cook and heat through for 2 minutes.
  • 4Garnish each bowl with dill, parsley and sour cream.
