My friend Pauline made this soup and brought it to our annual Halloween party. After sampling this, I told her I have to get the recipe. It's the best potato soup that I've had in a long while. Hope you enjoy it as well.

  • 3 c
  • 1 c
  • 1/2 c
  • 1/2 c
    carrot, shredded
  • 1/4 c
  • 1 tsp
    parsley flakes
  • 1
    chicken bouillon cube
  • 1/2 tsp
  • ·
    dash of pepper
  • 1 1/2 c
  • 2 Tbsp
  • 1/2 lb
    velveeta cheese,cubed

How to Make Pauline's Potato Soup


  1. In large saucepan combine potatoes, water, celery, carrots, onion, parsley, bouillon and seasonings. Mix well. Cover, simmer 15 – 20 minutes or until vegetables are tender.
  2. Gradually add milk to flour, mixing until well blended. Add milk mixture to vegetables. Cook until thickened. Add cheese. Stir until melted.
