Ingredients

3 Tbsp
butter
3 Tbsp
flour
2 c
heavy cream
1/2 tsp
salt and pepper
1 large
onion diced
2 Tbsp
butter
2 c
chicken broth
1 lb
velveeta cheese cubed
fresh shredded parmesan cheese for topping

Step-By-Step

1Place 3 tbsp. butter in large saucepan. Add the flour and make a roux. Stir in heavy cream and salt and bring to a boil reduce heat and thickened. Remove from heat and set aside.
2Place 2 tbsp. butter in Dutch oven. Add onions and saute until softened. Stir in chicken broth. Add the cream mixture and bring to a boil. Reduce the heat and add the Velveeta. Cook until the Velveeta is melted.
3Serve topped with shredded parm or any cheese of your choosing.
