Ingredients
- 3 tablespoons butter
- 3 tablespoons flour
- 2 cups heavy cream
- 1/2 teaspoon salt and pepper
- 1 large onion diced
- 2 tablespoons butter
- 2 cups chicken broth
- 1 pound velveeta cheese cubed
- - fresh shredded parmesan cheese for topping

Step 1Place 3 tbsp. butter in large saucepan. Add the flour and make a roux. Stir in heavy cream and salt and bring to a boil reduce heat and thickened. Remove from heat and set aside.

Step 2Place 2 tbsp. butter in Dutch oven. Add onions and saute until softened. Stir in chicken broth. Add the cream mixture and bring to a boil. Reduce the heat and add the Velveeta. Cook until the Velveeta is melted.

Step 3Serve topped with shredded parm or any cheese of your choosing.
