nitza's rice soup
This is my mother-in-law's recipe. It's pure warm comfort food, she made it for me once when I was under the weather and I make it for my kids now. She was born and raised in Puerto Rico and said its been a staple since she was a baby.

Ingredients
- 2 cups water
- 1 cup white rice
- 2 tablespoons vegetable oil
- 1/2 tablespoon salt
- - whole milk
How To Make nitza's rice soup

Step 1Rinse rice in colander, set aside. In a medium saucepan, bring water to a boil. Add oil and salt, then rice. Reduce heat to low, cover and simmer about 20 minutes, til water is absorbed.

Step 2Add as much milk as needed to make a soupy consistency- about 2 cup, depending on how thin or thick you prefer.

Step 3Simmer til milk is warm.
