This is my mother-in-law's recipe. It's pure warm comfort food, she made it for me once when I was under the weather and I make it for my kids now. She was born and raised in Puerto Rico and said its been a staple since she was a baby.

    vegetable oil
  • 1/2 Tbsp

    whole milk

How to Make Nitza's Rice Soup


  1. Rinse rice in colander, set aside. In a medium saucepan, bring water to a boil. Add oil and salt, then rice. Reduce heat to low, cover and simmer about 20 minutes, til water is absorbed.
  2. Add as much milk as needed to make a soupy consistency- about 2 cup, depending on how thin or thick you prefer.
  3. Simmer til milk is warm.
