I love hearty creamy soups and this one is a favorite.

Ingredients

  • 2 - boneless skinless chicken breast cubed
  • 3 tablespoons butter
  • 6 slices bacon cooked and crumbled
  • 8 ounces sliced mushrooms
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 3 cups chicken broth
  • 1 1/2 cups heavy cream
  • 2 cups gruyere cheese shredded
  • 1/4 cup fresh parsley chopped
  • - salt and pepper to taste

How To Make my creamy chicken soup

  • Step 1
    Add butter to Dutch oven. Cook chicken until almost done. Remove chicken with slotted spoon. Add onion, and garlic. Saute for 4 minutes. Add mushrooms and saute another 4 minutes.
  • Step 2
    Add chicken broth and bring to a boil. Reduce to a simmer. Add the heavy cream and bring back to a boil then reduce to a simmer. Add cheese and cook until melted.
  • Step 3
    Remove from heat. Add parsley and bacon. Season to taste.
