This is not a low fat recipe! It's an easy recipe to throw together after a long day at work, on a cold winter night.

Ingredients

  • 7 cups water
  • 2 tablespoons chicken base (i use tones)
  • 2 packages 8 oz. cream cheese
  • 1 bag 30 oz. shredded hash browns

How To Make easy potato soup

  • Step 1
    Add 7 cups of water and 2 Tablespoons of Chicken base to a large pot. Bring to a boil.
  • Step 2
    Cut both packages of cream cheese into small pieces. Drop pieces in boiling water and allow enough time for them to dissolve.
  • Step 3
    Dump 1 bag of shredded hash browns into the boiling mixture. Boil while stirring occasionally until potatoes are tender.
  • Step 4
    Season with pepper, shredded cheese, bacon bits or green onions (optional) My family enjoys this soup with diced ham added too.
