Creamy Potato Soup

This is a very creamy and delicious soup. Some times I just make it without the ham... I like it that way also.

potatoes peeled and diced
1/3 c
celery diced
1/3 c
onion, finely chopped
2 c
cooked ham, diced
salt and pepper to taste
5 Tbsp

1 c
heavy cream
1 c
half and half or milk

How to Make Creamy Potato Soup


  • 1Cook potatoes in salt water until tender. Drain and set aside.
  • 2In separate saucepan, melt butter over medium-low heat and saute celery, onion, salt and pepper.
  • 3Whisk in flour stirring constantly for 1-2 minutes until vegetables are tender and flour has cooked lightly. Slowly whisk in half and half or milk. Continue whisking until mixture begins to thicken.
  • 4Add cream and continue stirring until soup is creamy. Add in ham and potatoes and stir until blended. Salt and pepper to taste.
